Ron’s asked me a couple times to make the earl grey cupcakes again, and I just never seem to listen. While shopping today, I remembered to stop by the tea aisle, so I could pick up some peppermint or apple cinnamon type teas, when I remembered EARL GREY CUPCAKES! Of course, I couldn’t ignore the fact that I haven’t made them despite the requests. So.. I set out to bake them today!
I used 3 bags of tea, and also brewed 1 1/4 cups of tea to use instead of just water. I also cheated and used boxed cake mix. I just can’t bother to make it from scratch. I don’t know why. It’s not that it would be hard or that I don’t have the ingredients. Hmph.
EARL GREY CUPCAKES
ingredients
- 1 pack of cake mix
- 1 1/4 cups of water
- 1/3 cup of oil
- 3 eggs
- 3 earl grey tea bags
directions
- preheat oven to 350°
- mix dry ingredients – cake mix, earl grey tea (cut 3 bags and dump tea into mix)
- add eggs
- boil 1 1/4 cup of water and use remaining tea bag to make tea (let cool)
- add oil and cooled tea
- pour batter into pan or cupcake tins
- bake for 23 minutes
I frosted the cupcakes with a lemon zest cream cheese frosting that I whipped up. I’m not sure about the lemon + earl grey taste yet… All I know is after you eat one of these, you’ll be up for HOURS!
