I am pickling cucumbers for tonight’s dinner.
Best prepared a few hours before serving time.
Peel skin from cucumbers and thinly slice. Season with sea salt. Drizzle about 2 tablespoons of sesame oil over the cucumbers. Mix 1/4 cup of rice wine vinegar with 1/3 cup of sugar. Pour mixture over cucumbers. Let sit in fridge until it’s time to serve.
In a bit, I’m going to prepare the chicken for panko crusted chicken strips.
For lunch, Kim brought home a huge salad so we paired it with the sandwiches I made. Those Flaming Hot Cheetos are ferociously spicy. We also watched Blades of Glory whilst we ate. Cracked me up.
